Ingredients
– 1 cup Kodiak Cakes Flapjack and Waffle Mix
– 1 cup canned pumpkin puree
– 2 large eggs
– 1/4 cup vegetable oil
– 1/3 cup brown sugar
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground ginger
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon salt
Instructions
1. 1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.
2. 2. In a large bowl, whisk together the Kodiak Cakes mix, pumpkin puree, eggs, vegetable oil, brown sugar, cinnamon, ginger, nutmeg, and salt until well combined.
3. 3. Scoop the batter into the prepared muffin cups, filling them about 3/4 full.
4. 4. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
5. 5. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
