Ingredients
– 1 pound beef sirloin, thinly sliced
– 1 cup prepared kimchi, chopped
– 1 avocado, sliced
– 6 large tortillas
– 2 tablespoons soy sauce
– 1 tablespoon brown sugar
– 1 teaspoon sesame oil
– 1 teaspoon grated ginger
– 1 clove garlic, minced
– 1/4 teaspoon red pepper flakes (optional)
– Salt and pepper to taste
Instructions
1. In a shallow bowl, combine the sliced beef, soy sauce, brown sugar, sesame oil, ginger, garlic, and red pepper flakes (if using). Mix well and let marinate for 15 minutes.
2. Heat a large skillet over medium-high heat. Add the marinated beef and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes.
3. Warm the tortillas according to package instructions.
4. To assemble the burritos, place a tortilla on a flat surface. Top with a portion of the cooked beef, a spoonful of kimchi, and a few slices of avocado.
5. Fold the bottom of the tortilla up over the filling, then fold in the sides and continue to tightly roll up the burrito.
6. Serve the Korean-Style Burritos immediately, or wrap in foil to enjoy on the go.
Notes
For extra flavor, you can add a drizzle of your favorite Korean-inspired sauce, such as gochujang or ssamjang, to the burritos. The burritos can also be made ahead of time and refrigerated until ready to serve.
