Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 1 (28 oz) can crushed tomatoes

– 4 cups beef broth

– 2 cups water

– 8 oz lasagna noodles, broken into pieces

– 2 tsp Italian seasoning

– 1 tsp salt

– 1/2 tsp black pepper

– 1 cup shredded mozzarella cheese

– 1/2 cup grated Parmesan cheese

– Chopped fresh basil for garnish


Instructions

1. – In a skillet, brown the ground beef over medium heat. Drain excess fat.

2. – Add the onion and garlic to the skillet and cook until softened, about 3-5 minutes.

3. – Transfer the beef mixture to a slow cooker.

4. – Add the crushed tomatoes, beef broth, water, lasagna noodles, Italian seasoning, salt, and pepper. Stir to combine.

5. – Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the noodles are tender.

6. – Stir in the mozzarella and Parmesan cheeses just before serving.

7. – Ladle the soup into bowls and garnish with chopped fresh basil.

Notes

– For a thicker soup, use less water.
