Ingredients
– 1 lb ground beef
– 1 lb Italian sausage, casings removed
– 1 onion, diced
– 3 cloves garlic, minced
– 2 cans (28 oz each) crushed tomatoes
– 4 cups beef or chicken broth
– 1 can (15 oz) tomato sauce
– 2 tsp dried oregano
– 1 tsp dried basil
– 1/2 tsp red pepper flakes (optional)
– Salt and pepper to taste
– 8 oz lasagna noodles, broken into 1-inch pieces
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
Instructions
1. – In a large pot or Dutch oven, cook the ground beef and Italian sausage over medium-high heat until browned, 5-7 minutes, breaking up the meat as it cooks.
2. – Add the onion and garlic and cook for 2-3 minutes until fragrant.
3. – Stir in the crushed tomatoes, broth, tomato sauce, oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste.
4. – Bring the soup to a boil, then reduce the heat and simmer for 10 minutes.
5. – Add the broken lasagna noodles and continue simmering for 15-20 minutes, or until the noodles are tender.
6. – Remove from heat and stir in 1/2 cup of the mozzarella cheese.
7. – Ladle the soup into bowls and top with the remaining mozzarella and Parmesan cheeses.
8. – Serve hot, with crusty bread on the side.
Notes
– For a creamier soup, stir in 1/2 cup of ricotta cheese along with the mozzarella.
– Garnish with fresh basil or parsley for an extra pop of flavor.
– Store leftovers in the refrigerator for up to 4 days.
