Ingredients
– 3 medium zucchini, sliced into 1/4-inch rounds
– 1 cup ricotta cheese
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– 1 (24 oz) jar marinara sauce
– 2 tablespoons fresh basil, chopped
– 1 teaspoon garlic powder
– Salt and pepper to taste
Instructions
1. Preheat oven to 375°F. Grease a 9×13-inch baking dish.
2. In a mixing bowl, combine the ricotta, 1/2 cup of the mozzarella, and the Parmesan cheese. Season with garlic powder, salt, and pepper.
3. Arrange half of the zucchini slices in the prepared baking dish. Spread the ricotta mixture evenly over the zucchini. Top with the remaining zucchini slices.
4. Pour the marinara sauce evenly over the top and sprinkle with the remaining 1/2 cup of mozzarella cheese.
5. Bake for 30-35 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
6. Remove from oven and garnish with fresh basil. Let stand for 5 minutes before serving.
Notes
This dish can be made ahead of time and refrigerated or frozen for later. To reheat, cover and bake at 350°F for 20-25 minutes, or until heated through. Feel free to experiment with different types of cheese or add in other vegetables like sliced onions or mushrooms.
