Description

Ingredients

– 8 ounces linguine or spaghetti pasta

– 1 pound fresh asparagus, trimmed and cut into 1-inch pieces

– 3 tablespoons olive oil

– 3 cloves garlic, minced

– Zest and juice of 1 lemon

– 1/4 cup grated Parmesan cheese

– Salt and black pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

2. In a large skillet, heat the olive oil over medium heat. Add the asparagus and sauté for 3-5 minutes, until tender-crisp.

3. Add the minced garlic and sauté for an additional minute, until fragrant.

4. Add the cooked pasta, lemon zest, and lemon juice to the skillet. Toss everything together until well combined.

5. Remove from heat and stir in the Parmesan cheese. Season with salt and black pepper to taste.

Notes
