Description

This Lemon Capellini Salad is a bright, refreshing pasta salad that’s perfect for warm weather. Tender capellini noodles are tossed with a tangy lemon vinaigrette, fresh vegetables, and vibrant lemon slices for a light and zesty dish.


Ingredients

8 ounces capellini pasta

1/4 cup olive oil

2 tablespoons white wine vinegar

1 tablespoon lemon juice

1 teaspoon Dijon mustard

1 teaspoon honey

1 clove garlic, minced

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1 lemon, thinly sliced

2 tablespoons chopped fresh parsley


Instructions

1. Cook the capellini pasta according to package instructions. Drain and rinse under cold water.

2. In a small bowl, whisk together the olive oil, white wine vinegar, lemon juice, Dijon mustard, honey, and garlic. Season with salt and pepper.

3. In a large bowl, combine the cooked capellini, cherry tomatoes, cucumber, red onion, and lemon slices.

4. Pour the lemon vinaigrette over the salad and toss gently to coat.

5. Garnish the Lemon Capellini Salad with chopped fresh parsley.

6. Serve chilled or at room temperature.

Notes

This salad can be made ahead of time and refrigerated for up to 3 days. The flavors will continue to develop, making it even more delicious. You can also add additional vegetables, such as bell peppers or snap peas, to customize the salad to your liking.
