Description

These adorable Love Letter Strawberry Hand Pies are the perfect portable pastry for Valentine’s Day or any occasion. Buttery, flaky dough surrounds a sweet strawberry jam filling, creating a delightful handheld treat.


Ingredients

– 2 cups all-purpose flour

– 1 cup unsalted butter, chilled and cubed

– 1/4 cup granulated sugar

– 1/4 teaspoon salt

– 1/4 cup ice water

– 1 cup strawberry jam

– 1 egg, beaten with 1 tablespoon water for egg wash


Instructions

1. In a food processor, pulse the flour, butter, sugar, and salt until mixture resembles coarse crumbs.

2. Add the ice water and pulse just until the dough begins to come together. Do not overmix.

3. Divide the dough in half, shape each half into a disk, wrap in plastic, and refrigerate for at least 1 hour.

4. Preheat the oven to 400°F. Line a baking sheet with parchment paper.

5. On a lightly floured surface, roll one disk of dough to 1/8-inch thickness. Use a 3-inch heart-shaped cookie cutter to cut out 12 heart shapes.

6. Place 1 tablespoon of strawberry jam in the center of 6 of the heart shapes. Brush the edges with the egg wash.

7. Place the remaining 6 heart shapes on top and crimp the edges with a fork to seal.

8. Transfer the hand pies to the prepared baking sheet. Brush the tops with the remaining egg wash.

9. Bake for 18-22 minutes, until the pastry is golden brown. Allow to cool on the baking sheet for 5 minutes before serving.

Notes

For a decorative touch, use a small heart-shaped cookie cutter to cut out a design on the top of the hand pies before baking. Serve the Love Letter Strawberry Hand Pies at room temperature or slightly warm.
