Juicy meatballs stuffed with creamy, melted mac ‘n’ cheese, then drizzled with a sweet and tangy homemade BBQ sauce – this unique dish is the ultimate comfort food mashup that’s sure to be a new family favorite!
Ingredients
– 1 lb ground beef
– 1 cup dry breadcrumbs
– 1/2 cup milk
– 1 cup shredded cheddar cheese
– 2 cups cooked elbow macaroni
– 1/2 cup barbecue sauce
– 1 tsp salt
– 1/2 tsp black pepper
Instructions
1. – Preheat oven to 400°F.
2. – In a large bowl, combine ground beef, breadcrumbs, milk, salt, and pepper. Mix until well incorporated.
3. – Scoop about 2 tablespoons of the beef mixture and flatten it into a patty. Place a spoonful of the cooked macaroni and shredded cheese in the center, then fold the meat around it to completely enclose the filling.
4. – Arrange the stuffed meatballs on a baking sheet lined with parchment paper.
5. – Bake for 18-20 minutes, until the meatballs are cooked through.
6. – Remove from oven and drizzle the tops of the meatballs with the barbecue sauce.
7. – Serve hot and enjoy!
Notes
For best results, be sure to fully enclose the mac ‘n’ cheese filling within the meatball so the cheese doesn’t leak out during baking. You can also experiment with different cheese varieties or add in diced jalapeños for a spicy kick.
