Ingredients
– 1 cup unsweetened almond milk (or milk of choice)
– 1/4 cup chia seeds

– 1 dragon fruit, peeled and diced
– 2 tablespoons honey or maple syrup (optional)
– 1/2 teaspoon vanilla extract
– Pinch of cinnamon (optional)
Instructions
1. In a medium bowl, whisk together the almond milk and chia seeds. Let the mixture sit for 5-10 minutes, stirring occasionally, until thickened.
2. Fold in the diced mango and dragon fruit. If desired, stir in the honey or maple syrup and vanilla extract.
3. Divide the chia pudding between individual serving bowls or jars. Refrigerate for at least 2 hours, or up to 5 days, before serving.
4. When ready to serve, top with additional mango and dragon fruit pieces, a sprinkle of cinnamon, or any other desired toppings.
Notes
For a creamier pudding, use full-fat coconut milk instead of almond milk. You can also try adding a tablespoon of shredded coconut or a drizzle of peanut butter. This chia pudding is a great make-ahead breakfast or snack option.
