Ingredients

– 6 slices of bacon, diced

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tbsp chili powder

– 1 tsp cumin

– 1 tsp oregano

– 1 tsp salt

– 1/2 tsp black pepper

– 1 cup beef broth

– 1/2 cup bourbon

– 1/4 cup maple syrup

– 1 cup cornmeal

– 1 cup all-purpose flour

– 2 tsp baking powder

– 1/2 tsp salt

– 1 cup milk

– 2 eggs

– 2 tbsp melted butter


Instructions

1. 1. In a large skillet, cook the diced bacon until crispy. Remove the bacon from the pan, leaving the bacon grease.

2. 2. Add the ground beef to the bacon grease and cook until browned, breaking it up as it cooks. Drain any excess fat.

3. 3. Add the onion and garlic to the skillet and cook for 5 minutes, until the onion is translucent.

4. 4. Stir in the chili powder, cumin, oregano, salt, and pepper. Pour in the beef broth, bourbon, and maple syrup. Bring to a simmer and let the chili cook for 20-25 minutes, until thickened.

5. 5. In a medium bowl, whisk together the cornmeal, flour, baking powder, and salt. Stir in the milk, eggs, and melted butter until just combined.

6. 6. Heat a waffle iron and spray with nonstick cooking spray. Pour the cornbread batter onto the hot waffle iron and cook until golden brown and crispy, about 5-7 minutes.

Notes
