Description

These Maple Bacon Carrots are a simple yet incredible side dish. Tender roasted carrots are coated in a sweet and savory maple bacon glaze for a dish that’s sure to wow your family and guests.


Ingredients

– 1 pound carrots, peeled and cut into 1-inch pieces

– 3 tablespoons olive oil

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 6 slices bacon, diced

– 1/4 cup maple syrup


Instructions

1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

2. In a large bowl, toss the carrots with the olive oil, salt, and pepper until evenly coated.

3. Spread the carrots in a single layer on the prepared baking sheet. Roast for 15 minutes.

4. Meanwhile, in a small skillet, cook the diced bacon over medium heat until crispy, about 5-7 minutes. Drain on a paper towel-lined plate.

5. Remove the carrots from the oven and drizzle with the maple syrup. Toss to coat evenly.

6. Sprinkle the crispy bacon pieces over the carrots and return to the oven. Roast for an additional 10-15 minutes, until carrots are tender and glaze is caramelized.

7. Serve immediately, garnished with extra chopped bacon if desired.

Notes

For easier prep, you can use pre-cut carrot coins. The maple bacon glaze also works great on other roasted vegetables like Brussels sprouts or sweet potatoes.
