Description

Tender roasted apples and carrots coated in a sweet and savory maple dijon glaze, creating a comforting and flavorful side dish that’s perfect for any meal.


Ingredients

– 3 medium apples, cored and cut into wedges

– 4 medium carrots, peeled and cut into 1-inch pieces

– 2 tablespoons olive oil

– 2 tablespoons maple syrup

– 1 tablespoon dijon mustard

– 1 teaspoon dried thyme

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat the oven to 400°F (200°C).

2. In a large bowl, combine the apple wedges, carrot pieces, olive oil, maple syrup, dijon mustard, dried thyme, salt, and black pepper. Toss to coat the vegetables evenly.

3. Spread the coated vegetables in a single layer on a large baking sheet.

4. Roast for 15-20 minutes, or until the apples and carrots are tender and lightly caramelized, stirring halfway through.
