This Marinated Cilantro Lime Bean Salad is a refreshing and flavorful side dish or light main course that’s perfect for hot summer days. The combination of tender beans, fresh cilantro, and tangy lime zest creates a vibrant and satisfying salad.
Ingredients
– 2 (15 oz) cans mixed beans, rinsed and drained
– 1 cup fresh cilantro, chopped
– 2 tablespoons olive oil
– 2 tablespoons lime juice (from 1-2 limes)
– 1 teaspoon lime zest
– 1/2 teaspoon ground cumin
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. In a large bowl, combine the rinsed and drained beans, chopped cilantro, olive oil, lime juice, lime zest, cumin, salt, and black pepper. Toss gently to coat the beans evenly.
2. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
3. Serve chilled or at room temperature, garnished with additional cilantro and lime wedges if desired.
Notes
This salad can be made ahead of time and keeps well in the refrigerator for up to 3 days. For added crunch, you can also stir in toasted nuts or seeds just before serving.
