Description

Delicious and nutritious, these Mediterranean Stuffed Sweet Potatoes are a flavor-packed, healthy dinner or side dish. Roasted sweet potato halves are filled with a vibrant mix of sautéed vegetables, herbs, and crumbled feta cheese for a satisfying and guilt-free meal.


Ingredients

– 4 medium sweet potatoes, halved lengthwise

– 2 tablespoons olive oil

– 1 red bell pepper, diced

– 1 yellow onion, diced

– 3 garlic cloves, minced

– 1 cup cherry tomatoes, halved

– 1/4 cup crumbled feta cheese

– 2 tablespoons chopped fresh parsley

– 1 tablespoon chopped fresh oregano

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat the oven to 400°F (200°C).

2. Place the sweet potato halves on a baking sheet and roast for 25-30 minutes, until tender when pierced with a fork.

3. In a large skillet, heat the olive oil over medium heat. Add the bell pepper, onion, and garlic. Sauté for 5-7 minutes, until the vegetables are softened.

4. Remove the skillet from heat and stir in the cherry tomatoes, feta cheese, parsley, oregano, salt, and pepper.

5. Carefully scoop the vegetable mixture into the roasted sweet potato halves.

6. Serve the Mediterranean Stuffed Sweet Potatoes warm, garnished with additional herbs if desired.

Notes

For a vegan version, omit the feta cheese and use a plant-based alternative. You can also add other chopped vegetables, such as zucchini or spinach, to the filling.
