Ingredients
– 3 lbs sweet potatoes, peeled and cubed
– 3 tbsp olive oil
– 2 tbsp brown sugar
– 1 tsp salt
– 1/4 tsp black pepper
Instructions
1. – Preheat oven to 400°F.
2. – In a large bowl, toss the cubed sweet potatoes with olive oil, brown sugar, salt, and pepper until evenly coated.
3. – Spread the potatoes in a single layer on a baking sheet.
4. – Roast for 20-25 minutes, flipping halfway, until the potatoes are tender and caramelized.

Notes
