Ingredients

– 1 pound pinto beans, rinsed and soaked overnight

– 1 onion, diced

– Salt and pepper to taste

– Chopped cilantro for garnish (optional)


Instructions

1. – In a large pot, cover the soaked beans with fresh water and bring to a boil.

2. – Reduce heat and simmer for 45-60 minutes, or until the beans are tender.

3. – Drain the beans, reserving the cooking liquid.

4. – In the same pot, sauté the onion and garlic until fragrant.

5. – Add the cooked beans, cumin, chili powder, and oregano. Stir to combine.

6. – Mash some of the beans with a potato masher or the back of a spoon to thicken the mixture.

7. – If the beans are too thick, add a bit of the reserved cooking liquid to reach your desired consistency.

8. – Season with salt and pepper to taste.

9. – Serve hot, garnished with chopped cilantro (if desired).

Notes

For a creamier texture, you can blend a portion of the beans before adding them back to the pot. You can also experiment with different spices or additions like diced tomatoes or jalapeños to customize the flavor.
