Description

These authentic Mexican black beans are a quick, easy, and flavorful staple that can be enjoyed in so many ways. Serve them as a side, in tacos and burritos, or on their own for a satisfying vegetarian meal.


Ingredients

– 1 tablespoon olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 2 teaspoons cumin

– 1 teaspoon chili powder

– 1/2 teaspoon oregano

– 1/4 teaspoon cayenne pepper (optional)

– 2 (15-ounce) cans black beans, drained and rinsed

– 1 cup vegetable broth

– Salt and pepper to taste

– Chopped fresh cilantro, for serving


Instructions

1. Heat the olive oil in a large skillet or saucepan over medium heat.

2. Add the onion and sauté for 5 minutes, until translucent.

3. Add the garlic and sauté for 1 minute more, until fragrant.

4. Stir in the cumin, chili powder, oregano, and cayenne (if using). Cook for 1 minute.

5. Add the black beans and vegetable broth. Bring to a simmer and cook for 10 minutes, stirring occasionally, until the beans are heated through and the flavors have melded.

6. Season with salt and pepper to taste.

7. Serve the Mexican black beans hot, garnished with fresh chopped cilantro.

Notes

For a creamier texture, you can mash some of the beans with a potato masher or the back of a spoon. This dish also freezes well for easy meal prep.
