Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tomatoes, diced

– 4 cups chicken broth

– 1 tsp cumin

– 1 tsp chili powder

– 1/2 tsp oregano

– Salt and pepper to taste

– Chopped cilantro for garnish

– Lime wedges for serving


Instructions

1. 1. In a large pot or Dutch oven, sauté the onion and garlic in a bit of oil over medium heat until softened, about 5 minutes.

2. 2. Add the cubed chicken and cook until browned, about 7-10 minutes.

3. 3. Pour in the chicken broth and add the diced tomatoes, cumin, chili powder, oregano, salt, and pepper. Bring the mixture to a boil.

4. 4. Reduce the heat and let the soup simmer for 15-20 minutes, or until the chicken is cooked through and the flavors have melded.

Notes

– For a thicker soup, you can mash some of the cooked tomatoes against the side of the pot.

– Adjust the spice level by adding more or less chili powder to suit your taste.
