Indulge in the bold and vibrant flavors of authentic Mexican Street Corn, a delightful side dish that’s perfect for any occasion. Grilled corn kernels are coated in a creamy, spicy, and tangy sauce, then topped with crumbled cotija cheese and fresh cilantro for a truly irresistible taste of Mexico.

Ingredients

– 6 ears of corn, husks and silk removed

– 1/2 cup mayonnaise

– 1/4 cup sour cream

– 1 teaspoon chili powder

– 1/2 teaspoon paprika

– 1/2 teaspoon garlic powder

– 1/2 cup crumbled cotija cheese

– 1/4 cup chopped fresh cilantro

– 2 tablespoons lime juice (from about 1 lime)

– Salt and pepper to taste

Instructions

1. – Preheat grill or grill pan to medium-high heat.

2. – Grill the corn, turning occasionally, until charred and tender, about 10-12 minutes.

3. – In a large bowl, combine the mayonnaise, sour cream, chili powder, paprika, and garlic powder. Mix well.

4. – Add the grilled corn to the sauce and toss to coat evenly.

5. – Sprinkle the cotija cheese and chopped cilantro over the top.

6. – Squeeze fresh lime juice over the corn and season with salt and pepper to taste.

7. – Serve immediately and enjoy!

Notes

– For a creamier sauce, you can use a 1:1 ratio of mayonnaise and sour cream.

– Customize the spice level by adjusting the amount of chili powder.

– Garnish with additional lime wedges and fresh cilantro, if desired.
