Ingredients
– 1 block (14 oz) extra-firm tofu, pressed and cubed
– 2 tablespoons olive oil
– 2 tablespoons lemon juice
– 1 teaspoon ground cumin
– 1 teaspoon paprika
– 1/2 teaspoon garlic powder
– 1/4 teaspoon cayenne pepper
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 2 tablespoons tahini
– 1 tablespoon water
– 1 tablespoon lemon juice
– 1 clove garlic, minced
– 2 tablespoons chopped fresh parsley
– 2 tablespoons chopped fresh mint
Instructions
1. In a medium bowl, combine the cubed tofu, olive oil, lemon juice, cumin, paprika, garlic powder, cayenne, salt, and black pepper. Toss to coat the tofu evenly.
2. Thread the marinated tofu cubes onto skewers, leaving a little space between each piece.
3. Preheat a grill or grill pan to medium-high heat. Grill the tofu kebabs for 8-10 minutes, turning occasionally, until the tofu is lightly charred and heated through.
4. In a small bowl, whisk together the tahini, water, lemon juice, and garlic to make a tahini sauce.
5. Arrange the grilled tofu kebabs on a serving platter and drizzle with the tahini sauce. Sprinkle with the chopped parsley and mint.
6. Serve the Middle Eastern Tofu Kebabs warm, with lemon wedges on the side.
Notes
For best results, use extra-firm or super-firm tofu, which will hold its shape better on the kebabs. You can also marinate the tofu for up to 30 minutes to enhance the flavors. Leftovers can be stored in the refrigerator for up to 3 days.
