Ingredients
– 2 cups all-purpose flour
– 1/2 teaspoon salt
– 3/4 cup unsalted butter, chilled and cubed
– 1/4 cup ice water
– 3 medium apples, peeled, cored, and diced
– 1/2 cup granulated sugar
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1 egg, beaten with 1 tablespoon water for egg wash
Instructions
1. In a food processor, combine the flour and salt. Add the chilled butter and pulse until the mixture resembles coarse crumbs.
2. Add the ice water and pulse just until the dough begins to come together. Form the dough into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
3. In a medium bowl, mix the diced apples, sugar, cinnamon, and nutmeg.
4. On a lightly floured surface, roll the dough out to 1/8-inch thickness. Use a 3-inch round cookie cutter to cut out circles.
5. Place a heaping tablespoon of the apple filling in the center of half of the circles. Top with the remaining circles, pressing the edges to seal.
6. Crimp the edges with a fork and cut a small slit in the top of each pie to allow steam to escape.
7. Brush the tops of the pies with the egg wash.
8. Bake at 400°F for 18-20 minutes, or until the crust is golden brown.
9. Let cool on a wire rack for 10 minutes before serving.
Notes
For a more rustic look, you can use a knife to cut the dough into squares instead of using a cookie cutter. Serve the mini apple hand pies warm, with a dusting of powdered sugar or a scoop of vanilla ice cream on the side.
