Ingredients
– 1 cup canned pumpkin puree
– 2 large eggs
– 1/2 cup vegetable oil
– 1 cup granulated sugar
– 1 1/2 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
2. In a large bowl, whisk together the pumpkin puree, eggs, and vegetable oil until well combined.
3. Add the granulated sugar and whisk until the mixture is smooth and creamy.
4. In a separate bowl, combine the all-purpose flour, baking soda, salt, cinnamon, and nutmeg.
5. Gradually fold the dry ingredients into the wet ingredients, mixing just until no dry pockets remain.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the pumpkin bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
