Description
Mujadara is a beloved Middle Eastern dish made with lentils and rice, seasoned with aromatic spices and topped with crispy fried onions. This comforting one-pot meal is packed with protein, fiber, and flavor, making it a nutritious and delicious option for busy weeknights.
Ingredients
– 1 cup brown or green lentils, rinsed
– 1 cup long-grain white rice
– 1 large onion, diced
– 3 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1/4 teaspoon cayenne pepper (optional)
– 2 cups vegetable or chicken broth
– 2 tablespoons olive oil
– 1/2 cup crispy fried onions
– 1/4 cup fresh parsley, chopped
– Salt and pepper to taste
Instructions
1. In a large saucepan, heat the olive oil over medium heat.
2. Add the diced onion and sauté for 5-7 minutes until translucent and lightly browned.
3. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
4. Stir in the lentils, rice, cumin, coriander, and cayenne (if using). Season with salt and pepper.
5. Pour in the broth and bring the mixture to a boil.
6. Reduce the heat to low, cover the pan, and simmer for 20-25 minutes, or until the lentils and rice are tender and the liquid is absorbed.
7. Remove from heat and let stand, covered, for 5 minutes.
8. Fluff the Mujadara with a fork and transfer to a serving dish.
9. Top with the crispy fried onions and fresh parsley.
10. Serve hot and enjoy!
Notes
For extra flavor, try adding a squeeze of lemon juice or a dollop of plain yogurt on top. This dish also pairs well with warm pita bread.
