Ingredients
– 1 sheet puff pastry, thawed
– 8 oz sliced mushrooms

– 1 clove garlic, minced
– 1 tsp dried thyme
– Salt and pepper to taste
Instructions
1. – Preheat oven to 400°F (200°C).
2. – In a skillet, sauté the mushrooms in olive oil over medium heat until softened, about 5 minutes. Add the minced garlic and dried thyme, and season with salt and pepper.
3. – Unfold the puff pastry sheet and roll it out into a rectangle, about 12×9 inches.
4. – Spread the sautéed mushroom mixture evenly over the puff pastry, leaving a 1-inch border.
5. – Sprinkle the shredded cheese over the mushrooms.
6. – Starting from the long side, tightly roll up the puff pastry into a log.
7. – Cut the log into 1-inch thick slices and place them on a parchment-lined baking sheet.
8. – Bake for 18-22 minutes, or until the pinwheels are golden brown and the cheese is melted.
