Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 2 carrots, peeled and sliced

– 2 celery stalks, sliced

– 1 cup diced butternut squash

– 4 cups vegetable broth

– 1 teaspoon dried thyme

– 1 teaspoon dried rosemary

– 1/2 teaspoon ground black pepper

– 1/4 teaspoon salt

– 1 (15 oz) can diced tomatoes

– 2 cups chopped kale

– 1 (15 oz) can kidney beans, drained and rinsed

Instructions

1. In a large pot or Dutch oven, heat the olive oil over medium heat.

2. Add the diced onion and minced garlic. Cook for 2-3 minutes, stirring occasionally, until fragrant.

3. Add the sliced carrots, celery, and diced butternut squash. Cook for 5 minutes, stirring occasionally.

4. Pour in the vegetable broth and stir in the dried thyme, rosemary, black pepper, and salt.

5. Bring the soup to a boil, then reduce the heat and simmer for 15-20 minutes, or until the vegetables are tender.
