Ingredients
– 2 cups all-purpose flour
– 1/4 cup granulated sugar
– 1 teaspoon salt
– 1 packet (2 1/4 teaspoons) active dry yeast
– 3/4 cup warm milk
– 1/4 cup warm water
– 2 tablespoons unsalted butter, melted
– Vegetable oil for frying
– Powdered sugar for dusting
Instructions
1. In a large bowl, whisk together the flour, sugar, salt, and yeast.
2. In a separate bowl, combine the warm milk, warm water, and melted butter.
3. Pour the wet ingredients into the dry ingredients and mix until a shaggy dough forms.
4. Turn the dough out onto a lightly floured surface and knead for about 5 minutes, until smooth and elastic.
5. Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
6. Punch down the dough to release any air bubbles. Roll out the dough on a lightly floured surface to 1/2-inch thickness.
7. Cut the dough into 2-inch squares using a sharp knife or pizza cutter.
8. In a large pot or Dutch oven, heat 2-3 inches of vegetable oil to 350°F.
9. Working in batches, fry the beignets for 2-3 minutes per side, or until golden brown.
10. Remove the beignets from the oil and transfer to a paper towel-lined plate.
11. Dust the warm beignets generously with powdered sugar and serve immediately.
Notes
