Description

This Oktoberfest Stew with Lager and Smoked Sausage is a comforting and flavorful dish that captures the essence of the autumn season. Simmered to perfection, the rich broth, tender chunks of sausage, and hearty vegetables come together to create a satisfying and cozy meal.


Ingredients

– 1 lb smoked sausage, sliced into 1/2-inch pieces

– 1 onion, diced

– 3 cloves garlic, minced

– 2 carrots, peeled and diced

– 2 potatoes, peeled and diced

– 1 (12 oz) bottle lager beer

– 2 cups beef or chicken broth

– 1 tsp caraway seeds

– 1 tsp paprika

– 1 tsp dried thyme

– Salt and pepper to taste

– Chopped parsley for garnish


Instructions

1. – In a large pot or Dutch oven, cook the sliced sausage over medium-high heat until browned, about 5 minutes. Remove sausage and set aside.

2. – Add the onion to the pot and sauté until translucent, about 3-4 minutes. Add the garlic and sauté for 1 minute.

3. – Pour in the lager beer and use a wooden spoon to scrape up any browned bits from the bottom of the pot.

4. – Add the broth, carrots, potatoes, caraway seeds, paprika, and thyme. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the vegetables are tender.

5. – Return the sausage to the pot and season with salt and pepper to taste.

6. – Serve the Oktoberfest stew hot, garnished with chopped parsley.

Notes

This stew can be made ahead of time and reheated, as the flavors will meld together even more. For a thicker consistency, you can mix 1-2 tablespoons of flour with some of the broth before adding it back to the pot. Feel free to experiment with different types of sausage or add in other vegetables like celery or parsnips.
