Ingredients
– 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
– 1 cup diced fresh pineapple
– 2 tbsp olive oil
– 2 tbsp taco seasoning
– 8-10 small corn or flour tortillas
– Chopped cilantro, for serving
– Lime wedges, for serving
Instructions
1. – Heat the olive oil in a large skillet over medium-high heat.
2. – Add the chicken and taco seasoning. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
3. – Add the diced pineapple and cook for an additional 2-3 minutes, until the pineapple is heated through.
4. – Warm the tortillas according to package instructions.
5. – Serve the one-pan chicken and pineapple mixture in the warmed tortillas, garnished with chopped cilantro and lime wedges.
Notes
