Description

Ingredients

– 1 lb ground beef

– 1 lb Italian sausage, casings removed

– 1 onion, diced

– 3 cloves garlic, minced

– 1 (28 oz) can crushed tomatoes

– 4 cups beef broth

– 8 oz lasagna noodles, broken into 1-inch pieces

– 1 cup ricotta cheese

– 1 cup shredded mozzarella cheese

– 1/4 cup grated Parmesan cheese

– 2 tbsp chopped fresh basil

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, cook the ground beef and Italian sausage over medium-high heat until browned and crumbled, 5-7 minutes.

2. – Add the onion and garlic and cook until softened, about 3 minutes.

3. – Stir in the crushed tomatoes, beef broth, and lasagna noodle pieces. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the noodles are tender.

4. – Remove from heat and stir in the ricotta, mozzarella, and Parmesan cheeses until melted and combined.

5. – Garnish with fresh basil, salt, and pepper to taste.

Notes

– For a spicier soup, add a pinch of red pepper flakes.

– Substitute ground turkey or chicken for the beef and sausage if desired.

– Serve with crusty garlic bread for dipping.
