Ingredients

– 1 lb sirloin steak, cut into bite-sized pieces

– 1 onion, diced

– 2 bell peppers, diced

– 8 oz mushrooms, sliced

– 3 cloves garlic, minced

– 4 cups beef broth

– 1 cup milk

– 8 oz provolone cheese, shredded

– 1 tsp dried oregano

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. – In a large pot or Dutch oven, sauté the beef over medium-high heat until browned, about 5 minutes. Remove beef and set aside.

2. – Add the onion, bell peppers, and mushrooms to the pot. Sauté for 5-7 minutes, until vegetables are tender.

3. – Stir in the garlic and cook for 1 minute, until fragrant.

4. – Pour in the beef broth and milk, then add the cooked beef, oregano, salt, and pepper. Bring to a simmer and cook for 10-15 minutes.

5. – Remove from heat and stir in the shredded provolone cheese until melted and incorporated.

6. – Serve hot, garnished with additional cheese or fresh herbs if desired.

Notes

For a thicker soup, you can make a roux by melting 2 tbsp butter in the pot, then whisking in 2 tbsp all-purpose flour before adding the broth and milk. This will create a creamy, velvety texture.
