Description

Ingredients

– 2 cups all-purpose flour

– 1/4 cup granulated sugar

– 2 teaspoons baking powder

– 1/2 teaspoon salt

– 2 large eggs

– 1 cup ricotta cheese

– 1 cup milk

– 1/4 cup melted butter

– 1 tablespoon orange zest

– 1 cup chocolate chips


Instructions

1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

2. In a separate bowl, beat the eggs. Then stir in the ricotta, milk, and melted butter until well combined.

3. Pour the wet ingredients into the dry ingredients and whisk just until combined (do not overmix).

4. Fold in the orange zest and chocolate chips.

5. Heat a lightly oiled griddle or nonstick skillet over medium heat.

6. Scoop the batter by 1/4 cupfuls onto the griddle and cook for 2-3 minutes per side, or until golden brown.

Notes

For extra fluffy pancakes, separate the eggs and beat the egg whites until stiff peaks form before folding into the batter. You can also try using half all-purpose flour and half whole wheat flour for a heartier texture.
