Ingredients
– 1 pound linguine pasta
– 1 pound peeled and deveined shrimp
– 2 tablespoons olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 1 red bell pepper, diced
– 1 cup heavy cream
– 1 cup grated Parmesan cheese
– 1 teaspoon Cajun seasoning
– 1/2 teaspoon dried oregano
– 1/4 teaspoon cayenne pepper
– Salt and black pepper to taste
– Chopped parsley for garnish
Instructions
1. Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium-high heat. Add the onion and sauté for 3-4 minutes until translucent.
3. Add the garlic and bell pepper to the skillet and cook for 2-3 minutes, stirring frequently, until fragrant.
4. Reduce the heat to medium-low and pour in the heavy cream. Whisk in the Parmesan cheese, Cajun seasoning, oregano, and cayenne pepper. Season with salt and black pepper to taste.
5. Add the cooked linguine and shrimp to the creamy sauce and toss to coat evenly. Cook for 3-5 minutes, or until the shrimp are opaque and the sauce has thickened slightly.
6. Remove from heat and garnish with chopped parsley before serving.
Notes
For a spicier version, increase the amount of Cajun seasoning or add a pinch of red pepper flakes. You can also substitute the shrimp with another protein, such as chicken or sausage. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
