This 5-minute Peanut Butter Banana Chia Pudding is a creamy, protein-packed treat that makes for a delicious and healthy breakfast or snack. Packed with peanut butter flavor and the superfood benefits of chia seeds, it’s a satisfying way to start your day.

Ingredients

– 1/2 cup unsweetened almond milk

– 2 tablespoons creamy peanut butter

– 1 ripe banana, mashed

– 2 tablespoons chia seeds

– 1 teaspoon vanilla extract

– 1 tablespoon honey (optional)

Instructions

1. – In a medium bowl, whisk together the almond milk, peanut butter, and mashed banana until well combined.

2. – Stir in the chia seeds and vanilla extract. Mix until the chia seeds are evenly distributed.

3. – Cover the bowl and refrigerate for at least 4 hours, or overnight, until thickened.

4. – Remove from the fridge and give the pudding a quick stir. Drizzle with honey, if desired.

5. – Serve chilled, garnished with extra banana slices, chia seeds, and a sprinkle of cinnamon if desired.

Notes

– For a creamier pudding, use 1/3 cup of almond milk.

– Substitute other nut butters or bananas for different flavor variations.

– Top with crushed peanuts, granola, or cacao nibs for extra crunch.
