Ingredients

– 1 cup (2 sticks) unsalted butter, softened

– 1 cup creamy peanut butter

– 1 cup granulated sugar

– 1 cup packed brown sugar

– 2 large eggs

– 2 teaspoons vanilla extract

– 2 1/4 cups all-purpose flour

– 1 teaspoon baking soda

– 1/2 teaspoon salt

– 1 1/2 cups peanut butter cups, chopped


Instructions

1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

3. Beat in the eggs one at a time, then stir in the vanilla extract.

4. In a separate bowl, whisk together the flour, baking soda, and salt.

5. Gradually mix the dry ingredients into the wet ingredients until just combined.

6. Fold in the chopped peanut butter cups.

7. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

8. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still slightly soft.

9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a chunkier texture, use crunchy peanut butter instead of creamy. You can also substitute different types of chocolate candies, such as Reese’s Pieces or mini peanut butter cups, for the chopped peanut butter cups.
