Pepperoncini Chicken Skillet is a flavor-packed one-pan meal that’s quick and easy to make. Tender chicken simmered in a tangy, slightly spicy sauce with pepperoncini peppers creates a comforting and satisfying dish perfect for busy weeknights.
Ingredients
– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
– 2 tablespoons olive oil
– 1 medium onion, diced
– 3 cloves garlic, minced
– 1 cup sliced pepperoncini peppers, plus 2 tablespoons pepperoncini brine
– 1 cup chicken broth
– 2 tablespoons Dijon mustard
– 1 teaspoon dried oregano
– 1/2 teaspoon red pepper flakes
– Salt and black pepper, to taste
– Chopped fresh parsley, for garnish
Instructions
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken pieces and cook, stirring occasionally, until browned on all sides, about 5-7 minutes.
3. Add the onion and garlic to the skillet and cook for 2-3 minutes, until fragrant.
4. Stir in the sliced pepperoncini peppers, pepperoncini brine, chicken broth, Dijon mustard, oregano, and red pepper flakes.
5. Bring the mixture to a simmer and let it cook for 10-15 minutes, until the chicken is cooked through and the sauce has thickened slightly.
6. Season with salt and black pepper to taste.
7. Garnish with chopped fresh parsley and serve over rice, pasta, or mashed potatoes.
Notes
This dish can be made ahead and reheated, or frozen for later use. For a spicier version, add more red pepper flakes. You can also swap out the chicken for pork or beef if desired.
