Ingredients
– 12 hard-boiled eggs
– 1 pound Italian sausage, cooked and sliced
– 1 large onion, thinly sliced
– 2 cups white vinegar
– 1 cup water
– 1/4 cup sugar
– 2 teaspoons salt
– 1 teaspoon black pepper
– 2 bay leaves
– 1 teaspoon dried oregano
Instructions
1. In a large jar or bowl, combine the hard-boiled eggs, cooked sausage, and sliced onion.
2. In a saucepan, combine the vinegar, water, sugar, salt, black pepper, bay leaves, and oregano. Bring the mixture to a boil, stirring until the sugar and salt are dissolved.
3. Pour the hot brine over the eggs, sausage, and onions, making sure everything is submerged.
4. Cover and refrigerate for at least 24 hours, or up to 1 week.
5. When ready to serve, remove the eggs, sausage, and onions from the brine and arrange on a platter. Enjoy!
Notes
– For a spicier version, add a few sliced jalapeños or red pepper flakes to the brine.
– The pickled eggs, sausage, and onions will keep in the refrigerator for up to 1 week.
