Ingredients
– 2 cups shredded hash browns
– 1 cup shredded cheddar cheese
– 1 cup shredded Monterey Jack cheese
– 1/2 cup diced pimientos
– 3 large eggs
– 1/2 cup sour cream
– 1/4 cup milk
– 1 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/4 teaspoon cayenne pepper
– Salt and black pepper to taste
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large bowl, combine the shredded hash browns, cheddar cheese, Monterey Jack cheese, and diced pimientos. Mix well to evenly distribute the ingredients.
3. In a separate bowl, whisk together the eggs, sour cream, milk, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
4. Pour the egg mixture over the hash brown and cheese mixture, and stir until well combined.
5. Transfer the mixture to a greased 9×13-inch baking dish.
6. Bake for 35-40 minutes, or until the top is golden brown and the casserole is set.
7. Remove from the oven and let it cool for a few minutes before serving.
Notes
This casserole can be made ahead of time and refrigerated until ready to bake. You can also experiment with different types of cheese or add in diced ham or bacon for extra flavor. Leftovers can be stored in the refrigerator for up to 4 days.
