Description

Ingredients

– 1 cup all-purpose flour

– 2 tablespoons white sugar

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 1 egg

– 3/4 cup milk

– 1 cup diced fresh pineapple

– Vegetable oil for frying


Instructions

1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.

2. In a separate bowl, beat the egg and then stir in the milk.

3. Pour the milk mixture into the flour mixture and stir just until combined (do not overmix).

4. Fold in the diced pineapple.

5. Heat 1-2 inches of vegetable oil in a large skillet or Dutch oven over medium-high heat.

6. Using a tablespoon or small cookie scoop, gently drop spoonfuls of the batter into the hot oil, frying in batches for 2-3 minutes per side until golden brown.
