Ingredients
– 3 medium beets, peeled and diced
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 cup heavy cream
– 1/2 cup grated parmesan cheese
– 1 pound dried pasta (such as penne or farfalle)
– Salt and pepper to taste
Instructions
1. Preheat the oven to 400°F. Toss the diced beets with 1 tablespoon of olive oil and spread them on a baking sheet. Roast for 25-30 minutes, or until the beets are tender.
2. In a skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant.
3. Transfer the roasted beets to a blender or food processor. Add the heavy cream and parmesan cheese. Blend until the mixture is smooth and creamy.
4. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
