Ingredients
– 12 ounces pink bow-tie pasta
– 1 tablespoon olive oil
– 1 small onion, finely chopped
– 3 cloves garlic, minced
– 1 (28-ounce) can diced tomatoes
– 1/2 cup vodka
– 1 cup heavy cream
– 1/4 cup grated Parmesan cheese
– 1/4 cup fresh basil leaves, chopped
– Salt and black pepper to taste
Instructions
1. Bring a large pot of salted water to a boil. Cook the pink bow-tie pasta according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the onion and sauté for 3-4 minutes until translucent. Add the garlic and cook for 1 minute, stirring frequently, until fragrant.
3. Pour in the diced tomatoes and vodka. Bring the mixture to a simmer and cook for 5-7 minutes, stirring occasionally, until slightly reduced.
4. Reduce the heat to low and stir in the heavy cream. Simmer for 2-3 minutes, stirring constantly, until the sauce thickens.
5. Add the cooked pasta to the sauce and toss to coat evenly. Remove from heat and stir in the Parmesan cheese and fresh basil.
6. Season with salt and black pepper to taste.
7. Serve the Pink Bow Pasta with Vodka Sauce immediately, garnished with additional basil leaves if desired.
Notes
For a spicier version, add a pinch of red pepper flakes to the sauce. You can also use regular bow-tie pasta if you can’t find the pink variety. The sauce can be made in advance and refrigerated for up to 3 days, then reheated and tossed with the cooked pasta.
