Ingredients
– 1 cup unsalted pistachios, finely ground
– 1/2 cup unsalted butter, softened
– 1/2 cup granulated sugar
– 1 egg
– 1 teaspoon vanilla extract
– 1 1/4 cups all-purpose flour
– 1/4 teaspoon salt
Instructions
1. – Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. – In a food processor, pulse the pistachios until finely ground, taking care not to overprocess.
3. – In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla.
4. – Gradually stir the ground pistachios, flour, and salt into the wet ingredients until a soft dough forms.
5. – Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
6. – Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a more intense pistachio flavor, you can add 1/2 teaspoon of pistachio extract to the dough. These cookies can be stored in an airtight container for up to 1 week.
