Ingredients

– 2 cups all-purpose flour

– 1 cup unsalted butter, chilled and cubed

– 1/4 cup granulated sugar

– 1/2 teaspoon salt

– 1 egg, beaten

– 1/2 cup heavy cream

– 1 cup shelled pistachios, finely chopped

– 1/4 cup powdered sugar


Instructions

1. In a food processor, pulse the flour, butter, granulated sugar, and salt until the mixture resembles coarse crumbs.

2. Add the egg and heavy cream, and pulse until the dough just begins to come together.

3. Turn the dough out onto a lightly floured surface and shape into a disk. Wrap in plastic and refrigerate for at least 1 hour.

4. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

5. On a lightly floured surface, roll the dough into a large rectangle, about 1/4-inch thick.

6. Sprinkle the chopped pistachios evenly over the dough, leaving a 1-inch border.

7. Fold the dough in half, then in half again to create four layers. Cut the dough into 8 triangles.

8. Place the triangles on the prepared baking sheet, spacing them apart.

9. Bake for 18-20 minutes, or until the croissants are golden brown.

10. Remove from the oven and let cool slightly. Dust with powdered sugar before serving.

Notes

For a more pronounced pistachio flavor, you can add 1/2 teaspoon of pistachio extract to the dough. Additionally, you can toast the pistachios before chopping to enhance their nutty aroma.
