Ingredients
– 1 cup heavy cream
– 3 eggs, separated
– 1/2 cup granulated sugar
– 1 cup shelled pistachios, toasted and finely chopped
– 8 ounces dark chocolate, chopped
– 1/2 cup heavy cream
– 1 tablespoon unsalted butter
– 1/4 teaspoon salt
Instructions
1. 1. In a large bowl, beat the heavy cream until stiff peaks form. Set aside.
2. 2. In a separate bowl, beat the egg yolks and sugar until light and fluffy.
3. 3. Fold the whipped cream into the egg yolk mixture, then gently fold in the chopped pistachios.
4. 4. In a saucepan, heat the 1/2 cup of heavy cream and butter over medium heat until simmering. Remove from heat and stir in the chopped chocolate until smooth and glossy. Allow to cool slightly.
5. 5. Spoon the pistachio mousse into individual serving dishes or a large serving bowl. Pour the chocolate ganache over the top, allowing it to drip down the sides.
6. 6. Refrigerate for at least 2 hours before serving.
Notes
To toast the pistachios, spread them on a baking sheet and bake at 350°F for 5-7 minutes, or until fragrant and lightly golden. For a richer flavor, use a higher percentage of dark chocolate in the ganache.
