Ingredients
– 2 cups all-purpose flour
– 1 cup granulated sugar
– 1 (3.4 oz) package instant pistachio pudding mix
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 3/4 cup milk
– 1/2 cup unsalted butter, melted
– 2 large eggs
– 1 teaspoon vanilla extract
Instructions
1. – Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set it aside.
2. – In a large bowl, whisk together the flour, sugar, pistachio pudding mix, baking powder, baking soda, and salt.
3. – In a separate bowl, combine the milk, melted butter, eggs, and vanilla extract. Mix well.
4. – Pour the wet ingredients into the dry ingredients and stir just until combined, being careful not to overmix.
5. – Spread the batter evenly into the prepared loaf pan.
6. – Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
