– 1 cup shelled, chopped pistachios


Instructions

1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a large bowl, cream the softened butter and sugar together until light and fluffy, about 2-3 minutes.

3. Beat in the egg and vanilla extract until well combined.

4. In a separate bowl, whisk together the flour, baking powder, and salt.

5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chopped pistachios.

6. Scoop the dough by the tablespoonful and roll into balls. Place the balls onto the prepared baking sheet, spacing them about 2 inches apart.

7. Bake for 12-15 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes
