Ingredients

– 1 lb pork tenderloin

– 1 cup apple cider

– 2 tbsp brown sugar

– 2 cloves garlic, minced

– 1 tsp fresh thyme, chopped

– 3 medium sweet potatoes, peeled and cubed

– 2 tbsp butter

– Salt and pepper to taste


Instructions

1. 1. Preheat oven to 400°F.

2. 2. Season the pork tenderloin with salt and pepper.

3. 3. In a large oven-safe skillet, sear the pork on all sides over medium-high heat until browned, about 2-3 minutes per side.

4. 4. Transfer the skillet to the oven and roast for 10-12 minutes, or until the pork reaches an internal temperature of 145°F.

5. 5. Meanwhile, in a saucepan, combine the apple cider and brown sugar. Bring to a simmer and cook for 5-7 minutes, until reduced and thickened.

6. 6. Add the minced garlic and chopped thyme to the cider glaze and stir to combine.

7. 7. In a separate pot, cover the cubed sweet potatoes with water and bring to a boil. Cook for 15-20 minutes, until tender.

8. 8. Drain the sweet potatoes and mash with the butter. Season with salt and pepper to taste.

9. 9. Slice the pork tenderloin and drizzle the apple cider glaze over the top.

10. 10. Serve the pork tenderloin with the sweet potato mash on the side.

Notes

For a creamier mash, add a splash of milk or cream to the sweet potatoes. You can also roast the sweet potatoes instead of boiling them for a deeper flavor.
