Ingredients
– 12 jumbo pasta shells
– 1 cup ricotta cheese
– 1 cup canned pumpkin puree
– 1 cup shredded gouda cheese
– 1 egg
– 1/4 cup grated Parmesan cheese
– 1 teaspoon garlic powder
– 1/2 teaspoon ground nutmeg
– 1/4 teaspoon ground cinnamon
– 1/4 teaspoon salt
– 1/8 teaspoon ground black pepper
Instructions
1. 1. Preheat oven to 375°F.
2. 2. Cook the pasta shells according to package instructions until al dente. Drain and set aside.
3. 3. In a medium bowl, mix together the ricotta, pumpkin, gouda, egg, Parmesan, garlic powder, nutmeg, cinnamon, salt, and pepper until well combined.
4. 4. Stuff the cooked pasta shells with the pumpkin-cheese mixture.
5. 5. Arrange the stuffed shells in a baking dish and bake for 20-25 minutes, until heated through and lightly browned on top.
6. 6. Serve hot, garnished with additional Parmesan or chopped fresh sage, if desired.
Notes
For a creamier filling, add an extra 1/4 cup of ricotta cheese. You can also top the stuffed shells with a marinara or béchamel sauce before baking.
