Ingredients

– 1 (15 oz) can pumpkin puree

– 2 cups all-purpose flour

– 1 cup granulated sugar

– 2 large eggs

– 1/2 cup vegetable oil

– 1 tablespoon baking powder

– 1 teaspoon ground cinnamon

– 1/2 teaspoon ground nutmeg

– 1/4 teaspoon ground cloves

– 1/4 teaspoon salt


Instructions

1. 1. Preheat the oven to 375°F. Grease a 12-cup muffin tin or line with paper liners.

2. 2. In a large bowl, whisk together the pumpkin puree, eggs, oil, and sugar until well combined.

3. 3. In a separate bowl, mix the flour, baking powder, cinnamon, nutmeg, cloves, and salt.

4. 4. Gently fold the dry ingredients into the wet ingredients, being careful not to overmix.

5. 5. Scoop the batter into the prepared muffin cups, filling them about 3/4 full.

6. 6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
