Ingredients
– 2 lbs purple sweet potatoes, peeled and cubed
– 1 cup granulated sugar
– 1/4 cup water
Instructions
1. – In a large saucepan, combine the cubed purple sweet potatoes and water. Bring to a boil over high heat.
2. – Reduce heat to medium-low and simmer for 15-20 minutes, or until the sweet potatoes are very soft.
3. – Drain the sweet potatoes and mash them until smooth.
4. – Return the mashed sweet potatoes to the saucepan and stir in the sugar.
5. – Cook over medium heat, stirring frequently, for 20-25 minutes, or until the mixture has thickened to a jam-like consistency.
6. – Remove from heat and allow to cool completely before transferring to jars or containers.
Notes
– Store the Purple Sweet Potato Jam in the refrigerator for up to 2 weeks.
